After the old forum software breaking in a way that we were unable to fix, we've migrated the site to a new platform.

Some elements aren't working as we'd hoped - some avatars didn't survive the transition, and we're still having issues with attachments that weren't added as inline images, but we're hoping to have that all sorted out soon.

What people want

Hello everyone ive been making coffee for about 9 months in our new cafe and I really enjoy it  Iam no barista but Iam learning alot just by doing it. I find it quite amazing the differant ways people like there coffee the other day somebody asked me for an 1/8 of a shot i smiled had a geuss and they were happy i thought as long as they are happy thats fine.

    What - just an 1/8 of a shot? Or with milk? But yes, happy customers are good. Being judgemental and forcing them to try things 'your way' is a risky way to approach any service industry.
  • I'm still trying to get my head around a 1/8th shot. So if you split a double you have 2 singles. Half of the single is 1/4 of the double and half of the 1/4 is 1/8th of the double. so thats around 3.075 ml of espresso. How did you manage that  ??? Oh, welcome by the way ;D
  • yes 1/8  of a shot then flat white in a mug. It seems some people just like a hint of taste in there coffee.
  • I just guessed it to be honest I started the shot counted to 5 and shut it off they said that was great i thought iam happy if they are.
  • And how do you charge for something like that? I'd charge full price, run a full double, pour a bit into cup for them and after they have their drink I would drink the rest :D
  • we charge buy cup size  so they had a large thats what they paid the lady was fine with that she was just happy she got close to what she wanted I
  • Nice one. Its whats in the cup ( or lack of) that counts. Mind you, I could save you some money. I would just have to breath on some textured milk to make a 1/8th shot, such is my daily intake  :rofl: :rofl:
  • Just holding the cup in your hands should do the trick.  Brewing by osmosis.
  • If I'm forced to have coffee where I know they produce gushers and an 'espresso' is served in mug at a volume of at least 100ml..... Then I ask them to pull it short. Not that that's the case here, but that's why I ask for it that way at times.

    And I do the same and get about 1 in 10 that even understand what I mean...
    I only drink coffee if I'm out and about rarely, and it's only from a select few. I'm also anal enough to stand back and watch a couple of shots before ordering.  I'd prefer to go without than drink a bad coffee because I know I won't finish it.  Kudos to a barista who will serve a customer what they want.  Heaven forbid should we all be different!!

  • I have a customer who has a glass of warm textured milk with five ml of coffee poured on top - which only just 'stains' the milk but she keeps coming back as she says I'm the only one who knows how to make it!
  • I have a family member who is very sensitive to the taste of coffee. Same also applies to certain spices. They have learned to order a glass of textured milk and to have one shot of espresso on the side. They ask for the espresso to be delivered in one of the small stainless steel milk jugs (unusually presented when a pot of tea is ordered). They then pour in the espresso to make a weak coffee that is to their liking. They have mentioned that some stores charge them for an espresso, plus anywhere up to $3.50 for the milk, claiming they are getting two drinks. In reality they are getting one coffee, split into two vessels. Considering a pot of tea comes with numerous vessels (pot, cup, milk) this argument does not hold water. Being very polite, no argument is ever made, they just choose to never return. A little bit of excellent customer service goes a long way. After all, many people have a coffee machine at home, but go out for coffee, simply to enjoy the social experience. They do expect to get what they ask for, after all, it is the "hospitality" industry.
  • Iam no expert and it does slow me down giving people exactly what they want with there coffee but they keep coming back and leave with a smile  :)
