After the old forum software breaking in a way that we were unable to fix, we've migrated the site to a new platform.

Some elements aren't working as we'd hoped - some avatars didn't survive the transition, and we're still having issues with attachments that weren't added as inline images, but we're hoping to have that all sorted out soon.

Commercial Conical Grinders Doser or Electronic Dose options

As per the title, I am currently in the throws of locking down purchasing an additional Commercial Conical Grinder. Currently I am running a K10 WBC with an external timer to minimise waste and to improve consistency with me and the staff when we are flat out.

Plus and minuses with both dosered and E style commercial grinders and variation between brands. So a place to discuss them and maybe change my mind from buying another K10 WBC and setting up another timer to go with it.

My biggest concern with going to an E style grinder is dose consistency and distribution.

Options available -

Anfin ?? apart from their dosers being good nothing known.

Compak K10 (I like it)
Compak Fresh (Iwant to like it but it's ugly)
Gino Rossi - NO!
Mazzer Kony E (a bit to small for what I want)
Mazzer Roubur (doser known to SUCK)
Mazzer Robour E (inconsistent dose and drop?)
Macap M7 Doser
Maccap M7D liked the few quick goes of it I had.

ZERO interest in the cheap chinese clones for this job.

Interesting I ran across the new LSM Auto range of flat burr grinders decent prices and worthy of a look for home users.

So what do I spend my $$ on?

  • I currently have the BNZ MD74 for home use I have many family members currently in cafes or restaurants I see how it can get hectic Purely as an observer and seeing that constant flow is better than stop/start For that reason I prefer a doser model On a doser one can turn it on - keep an eye on it (if not a timer model), while you or your staff are getting the group handle ready, flushing the machine - this task can be completed easily within the grinding time required Then you are free to start the coffee routine Whereas if you have an electronic model you are stuck to the grinders fork until you have the satisfactory amount of coffee I know others may have  a differing view, but that's the sort of information you want, to make a sensible decision for your business KK
  • We replaced the main doser grinder in our "in roasterie" coffee house about 6 months ago, with a Macap M7D electronic programmable koni-kill grinder. The last time I looked at the setting, it was set to do a double drop in 3.65 seconds. As you can imagine in our situation (roaster / coffee house) our head barista is a gun  and is very very and did I say very particular, the coffees are excellent and produced expeditiously in a busy situation with utmost care and attention, the equipment is adjusted to keep it all happening that way all the time, and in the odd times we needed to remove the M7D for demos etc she was not happy. I cant see the problem with waiting 3.65 seconds (in our case) for the drop to occur and in any case, all good  baristas learn their own workstation and then play it accordingly to best effect. And in any case if speed is the object look at the ever increasing number of competitors that turn up to barista Comps with E type grinders of whatever type now, where that IS the object. The long and the short of it is,  I suspect Tim that no matter what you choose to run with you will learn the system and run with it  ;) Rgdz, Attilio very first Crema site sponsor.

  • Surely there is a lot of sense in buying another the same. Working two different grinders would have to be harder than both the same.  Maintenance is also easier if both the same. You could of course dump the current grinder and buy two new ones. If you plan on chucking it in the skip let me know and I will save it from the landfill ;D
  • Tell you what UNM you buy my K10 off me for $2k and I will go buy 2 new ones  :D Not so worried about the time taken for either option. My current timer/doser option is slower than a straight E and takes more manual input. As Attilio mentions you just adjust the workflow to suit, currently I tend to grind and load a PF as I am finishing taking an order or chatting to a customer so this time get used for other things. Time taken to correct drop/distribution or dosing inconsistencies are more of a problem than the actual grind time. If your swearing at your grinder clumping on a hot and humid day outside is not cool at all so that's partly why the doser is still being considered.

    Since I have been using the Kony-E for a month or so in a home environment I can see how it might be slower than the doser version but the doser version has the advantage of breaking up the clumps that the Kony generates, and I suspect the Robur would be the same. If speed is your thing then get a doser.
  • The kitchen bench looks like it would put any Cafe this side of Melbourne to shame at present  8) 3 out of the 4 Compak big boys. K10, A8 & K8 Silenzio to play with in the next week. Anyone want to send me a K10 Fresh for 'evaluation' I would happily add it into the mix and complete the set ;D Mods on the dosing chambers during the week for the K8 and 10 and some testing and playing with the newly purchased A8.   • I have a Wega like yours, a Compak K10, a Pharos, a Lido & a Breville smart grinder on my bench at the moment, I have thought about converting either the Wega or Compak to a doserless, but am struggling to find a reason!
  • Of these if and 'when' I buy a K10 fresh the K8 may well become a stripped then doserless (use a mazzer chamber and OE funnel? ) out and dedicated brew grinder. I will do a review of sorts on the A8 as it is an interesting doserless in it can hold 1 or 2 single shots (user selectable) preground in the chute which means if your busy the grinder is refilling while your pulling the shots and eliminates one of the minor downsides of doserless. It also has a straight grind on demand option too.
  • If you ever want to demo the LSM Tk conical (68mm) , I'd be happy to organize something.

  • It's pretty bullet proof. The on demand conical is great, 21 grams under 5 seconds.

    That is a nice looking bit of kit! Small, compact and would be a domestic wonder!!
  • Size is good for a big conical. 352 deep x 200 wide x 610 high. Also 84mm and 64 mm flat blade on demand (only 570 high) Will DM other stuff
  • What's grind retention like though?  That's the only killer with these commercial machines in a domestic environment.
  • Maybe when I get Tim (Bean Flying) to demo in a few weeks he can report back, happy for an honest review. We have been impressed so far, used it at Fine foods in Melbourne and knocked out 40kg in 4 days and it didnt miss a beat.
