After the old forum software breaking in a way that we were unable to fix, we've migrated the site to a new platform.

Some elements aren't working as we'd hoped - some avatars didn't survive the transition, and we're still having issues with attachments that weren't added as inline images, but we're hoping to have that all sorted out soon.

crema dissipate quickly

Hi,

most cafes closed for easter holiday, I got myself some Indian Monsoon from my usual roaster in City Road on Thursday, pulled about nine shots of espresso from past three days using my Sunbeam em6910, still trying to get 30ml in 25sec with same tamping pressure, well result some tasted good some tasted not so good, I do flush and clean the grinder before making the shot. my question is this indian monsoon has very think crema but this crema dissipate very fast as well, I mean in 10 sec and look at the shot from above I can see crema even breaking up showing the espresso underneath, so what can cause that? is something I do wrong along the way? Please advice

  • well, from what you describe, at least you know the roast is fresh & well stored ... Bubbly, thick crema is usually a sign that the roast is relatively recent - it hasn't de-gassed sufficiently, & needs to 'rest' longer to develop body. Monsooned Malabar is, by nature, a crema monster.
