After the old forum software breaking in a way that we were unable to fix, we've migrated the site to a new platform.
Some elements aren't working as we'd hoped - some avatars didn't survive the transition, and we're still having issues with attachments that weren't added as inline images, but we're hoping to have that all sorted out soon.
Bretts MM Is this a single origin bean? Coffee No1 - the Ice-breaker. It is a little more oily than beans I have previously used. Nice aroma, and different to others I've tried. Quite moreish. Being the first .. this is first impressions only - and need to adjust the grind. Dose - 16.9g (used 16g) Tamp - medium Pour - 25 secs for 20ml Triple fellini required to slow the pour Grind was too coarse for this bean and had to hold the lever back so that it didn't rise too quickly. Not sure how effective this is .. as it usually interrupts the flow. Good crema Rating - 8.5/10 For my fist shot .. it turned out a nice coffee .. with plenty of flavours going on. It is full-flavoured although lacks smoothness. Georges Premium also lacked smoothness, yet won the last smackdown ..so it is not necessarily a deal-breaker. After finishing the cup, I usually check the aroma emanating from the cup .. in order to finalize my assessment of what the coffee had just delivered. In this case .. there wasn't any lingering coffee aroma that I could detect .. which I thought was a little strange. Overall .. a nice coffee for the firsty .. which will improve with more practice - to get the best out of these little critters. I will be adjusting the grind a little finer to slow the pour down for the next one .. which will be happening sooner rather than later. I'm keen to whip these little suckers into good form .. trust me. 8)
You've got to try and stop the MM from gushing. It's a single origin and roasted darker than I usually go but I didn't mind it. It threw them in for you to try something new and different but I reckon the Rwanda will be more to your tastes. Major Tom not here today... Yet but the postie someone's runs late. 8.5 for MM on your first shot is a good effort! I sometimes pull half a cup of acid initially when dialing these in
I'm trying another MM now. As for Aus Post .. not unusual for them to take the extra day .. meaning it will arrive tomorrow. It's why I sometimes do express .. I should've gone the extra $2.50 I know .. it's cruel to keep you hanging like that. :tear hair: Different is good. It is a bit of a lucky dip .. only you'll never discover new gems if you don't try new ones. Yeah .. first try was on par with the Lavazza I get when over at a Cafe in Taylors Lakes - which rates an 8.5/10 I'll tighten it up with a slightly finer grind and firmer tamp .. and see how it goes this time? Back shortly
Roast date - 5th June (12 days) Bretts MM single origin Adjusted grind finer Dose - 16.4g Tamp - firm1. Polish only 2. Light 3. Light+ 4. Light/medium 5. Medium 6. Medium/firm 7. Firm 8. Hard (Gorilla as KK puts it) Pour - 20 secs for 20ml Triple fellini - as it tended to gush a little. Rating - 9.25/10 Lovely .. I reckon if I can slow it down to a 25 sec pour .. with say, only a double fellini - it will break into 9.3/10 Clean .. with lots of flavours going on there.. and quite different to any other coffee I've tried so far. No problem with the depth of roast. I'll take a stab and guess that it is not from Central or South America .. or Africa? Is it Indonesian or from New Guinea? I wouldn't know .. as I haven't tried any from those locations. * Excellent choice and roasting Brett .. it's what ends up in the cup that counts .. and this is up there. :thumb:
YAY... I' thrilled. I reckon it'll develop nicely over the next week also! This is an Indian bean that has some special post-processing 'elements' exposure.
Had 2 more cups of Bretts MM .. and even though I've adjusted the grind each time .. and doing a hard tamp .. the pour gushes out and lasts only 15 secs 1. 8.5/10 (15s) 2. 9.25/10 (20s) 3. 8.5/10 (15s) 4. 8.8/10 (15s) It still manages to taste nice .. even with the faster pour, unlike other beans I've tried where the pour has bean too quick. Number 5 coming up. I'll go finer again and do the hard tamp. I'm still using a plastic tamper that came with the machine. Seeing I have bean doing polish only, light and medium tamps .. I didn't think it was so crucial to have a SS metal one. Now that I am having to do a hard tamp .. a proper heavy tamper is necessary - to get the job done properly in cases where I need to use KKs Gorilla move. 8) I need to persist with the MM so that I can mark the dial on the grinder .. to then dial it way back coarser for the Major Tom
Bretts MM single originNo5 Adjusting the grind even finer, upping the dose slightly, and going the Ultra Gorlla tamp hasn't change the pour. Dose - 16.7g Tamp - Gorilla Pour - 15 secs for 20ml Rating - 9.15/10 Heaps of crema and colour .. it certainly looked good in the cup. The dial on the grinder is at 3 o-clock for anyone with (or used) a Compak grinder .. which is pretty fine, although still has a grainy feel .. and well short of being powdery like the Turkish .. not going there. It was not what I would call smooth, rich, or full-bodied .. but for a fast 15 sec pour .. it is however full-flavoured and a very nice tasting cup of coffee I must say, especially for a single origin bean - and worthy of a high rating imo. Considering it has only had a 13 day resting period so far .. and according to the local Gurus in Chat .. it requires a minimum of 3 weeks .. scoring a 9.15/10 at this stage is pretty impressive. I'm thinking it is what it is .. even though it doesn't appear it is going to slow down to the ideal 25 sec pour time .. the extra 2 weeks rest it still needs to get to its sweet spot - is likely to boost it's rating to a 9.2/10 .. which would put it into the 'elite' category. Rather than continuing to aim for the 'sweet spot' at this early stage - I will put them away for the time bean .. mark the dial with some white-out (or pen on tape?) and allow these budding babes to get their beauty sleep. I'll try the Rwanda Brett sent me at the current fine setting with my first attempt .. to see how they respond? I'll start at the base dose - 16g .. and work my way up.
Try a blend of 50/50, The Rwanda and the MM. I often blend an Ethiopian with Indian Monsoon Malabar, but prefer them when they have rested for at least 2 or 3 weeks. If the MM is roasted darker it will age quicker.

Good call LW! Major Tom first shot. Grind was spot on for double ristretto. This has some nice spice and nut characters. There's an aftertaste however... Like a nice red with the faintest taint. Jeff'd know instantly... I was drinking a Peru roasted last Thursday that was a creamy and glorious 9.45 when these arrived so a side by side was in order and completely unfair on the Major Tom. That said as a first shot it was in the very good range: 9.05/10 What's holding it back you ask... A double ristretto in milk can't fail when it looks this good. I reckon up one degree on the PID and just a little freer with the pull but that will have to wait until tomorrow. Cheers Moony!
Bretts Rwanda - single origin Dose - 16.5g Tamp - medium Grind - same as MM Pour - 30 secs for 20ml Triple fellini Rating - 9.1/10 Better pour although a bit thin. Nice .. I liked it.
Major Tom - blend Backed grind right off quite a bit. Dose - 16.9g Tamp - medium Pour - 25 secs for 20ml Single fellini Rating - 9/10 Nice overall coffee .. only flavours were a little muddied.. i.e. lacked clarity.
Cool The Major Tom wasn't as good today. The tainted aftertaste is still there despite a freer shot and a small lift in the temperature. Will try again tomorrow: 1. 8.9/10 2. 8.7/10 I'm going to Syphon 30g of these bad-boys on the weekend because Moony's been so generous, and if want to see if I can make that taint disappear. The front end of this blend is spicy and fabulous.
The beans haven't changed .. ^ that's Brett losing his mojo >:D ... it happens. :o .. well, it does to me.

Cool. Results can only be interpreted as a latte tho. Speaking of interpreting results .. what machine were you using for the above ratings .. Pavoni lever or Diadema e61? Question - (Brett) - What was the Peru you were using .. and where from .. mycuppa .. or did someone roast up some green? ps. Jonty is sending me some of his recently roasted green beans. More fresh meat beans to rate. :thumb:

Diadema machine. The Peru was from BeanGreen roasted by me!!
Hmm .. Upside - excellent work Downside - I was hoping they were imported .. so I could order some of that :'(
Major Tom 1. Dose - 16.9g Tamp - medium Double fellini Pour - 20 secs for 18ml Rating - 9.24/10
2. Adjusted grind slightly finer Dose - 16.9g Tamp - medium Double fellini Pour - 20 secs for 20ml Rating - 9.18/10 Tried to slow down pour to 25 secs with finer grind. The coffee wasn't as nice .. lack of clarity in flavour .. but still a very nice drop nonetheless. Conclusion - The grind setting on the first cup may have bean right .. and only needed to up the dose and/or tamp firmer. Can't be too far off - if the rating is hovering around the 9.2 mark
Following on .. Major Tom Adjusted grind back to '1' above .. upped the dose .. tamped firmer .. and Bang! .. Moony is back in (serious) coffee business :thumb: Dose - 17.2g Tamp - medium/firm Double fellini Pour - 25 secs for 20ml Rating - 9.3/10 Yeah Baby! 8)
Ashy... That's the taint. I've still got some of the other Major Tom in the freezer and they don't have this characteristic. I French pressed some of the old stuff from the freezer after the Syphon of the newer batch. Same name, different taste. On the big conical/PID the ashy taint is very pronounced: 93degC/60mm in 30 sec 8.3/10 (not sinkable but less drinkable) However... Downstairs to Mr Pavoni and 64mm planar burrs of the F5 and... : 9.15/10 Ashy flavour is muted and the coffee flavour is better balanced. I am not qualified as to theorise why but I'd love someone who is to chime in. If I'm in a child/wife space tomorrow I'll grind with the Conical and try the Pav.
i don't have the acute sense of taste to detect an ashy taste in the coffees I've bean making, only I do know that between the first batch and the second I sent you .. Glenn at Ground Control was in the process of installing a new roaster. I'm just putting it out there .. that the ashy taste may be due to breaking in .. or still experimenting with the settings for the new roaster.. and haven't perhaps got it spot on yet? Up until the last couple of Major Toms .. I had bean thinking that the beans were a little different to the earlier batch.. only I wasn't sure whether it was because they were fresher .. and that I was used to the more aged flavour - or that I hadn't yet found the right method/grind setting. All good now though.
Major Tom1. 9/102. 8.9/103. 9.15/10Rwanda Roast date - 5th June (18 days) Dose - 16.5g Tamp - Light+ Single fellini Pour - drippy .. 45 secs for 17ml Partial 2nd extraction to top up to 20ml Rating - 9.1/10 I have put masking tape on the grinder to mark grind positions .. so I started with MT grind setting. Will back the grind off to coarser for the next one.. as this grind was too fine. It was a very nice tasty coffee with a distinct flavour that had some zing to it. Adjusting the grind to finer & coarser settings for different beans will be much easier now.
Major Tom Roast date - 4th June (19 days) Dose 16.9g Tamp - Light+ (a heavier tamp would've dropped the level in the basket below 4mm from top) Double fellini Pour - 30 secs for 20ml Rating - 9.4/10 Fabulous coffee. After extraction .. 7mm of crema .. after 2 mins .. still 5mm of crema .. which is a good sign. Looked perfect in the cup and certainly delivered.
Major Tom1. 9.1/102. 8.8/103. 9/10Rwanda Dose - 17g Tamp - Hard Grind - coarser Triple fellini Pour - 20 secs for 20ml Rating - 8.3/10 Ample crema but lost the flavour it had with previous coffees. Wasn't all that impressed with the underlying flavour that it did produce. Will need to go a tad finer for the next one.
I'm going to try another Major Tom with the temp of my machine up. 9.4 ??? Wow!
Ooooh .. 9.4/10 Majot Tom and Brett's MM & Rwanda should be coming into their peak at 3 weeks post roast right about now .. so some good times to be had I reckon. I've got the MT marked .. so I will be focussing on getting Brett's gear on song. :coffee2:
Jonty'sYirgacheffe Kanga and Indian Tiger Mountain have just arrived today. My Birthday was yesterday .. so some nice timing there .. by Jonty - he didn't know. :thumb: Both were roasted on 19th June (last Thursday) so I'll give them a little more time to settle before ripping into those little fellas.
Golly .. Brett and Jonty are showing me up with their professionalism by sending their beans in one-way valve bags .. Jonty's are in a bright red, almost fluro. *Think I'll have to join the program at some stage .. rather than sending mine in plastic click sandwich bags :-[ lol.
Thanks Brett Ended up going to a local Thai Restaurant that I hadn't bean to before. My sister and I went for the Banquet .. which included a coffee from a pretty impressive machine and grinder setup (name?) Food was fantastic .. but the latte was shidhouse. I asked for a double shot .. and it tasted like the press the button twice kind of double shot instead of the double basket. I always say .. you don't go to an Asian shop for a good coffee .. and you don't go to an Italian shop for good fried rice Seeing I couldn't pour it down the sink and make another .. I drank it - and complimented the young female Thai Barista on her nice coffee Art. One of those focus on the positives moments .. especially seeing everything else was excellent .. and being my Birthday n all. Usually they only give you an instant coffee, or at best .. percolated. I knew not to pay extra for one - to only set myself up for disappointment. I get a little 'unsettled' when I pay a decent price for a coffee .. and it doesn't score at least an 8/10.
Jonty's Ethiopian Yirgacheffe(Konga) - single origin This batch was oily as well .. like Bretts, so it must be usual for beans roasted to 2nd crack. When roasting green beans in my popper .. I opted for a medium, and not a darker roast .. so I never took it much past 1st crack when the beans had only started to show signs of oiliness in some of the beans. Roast date - 19th June (6 days) Dose - 16g .. did 17g but had 1g left over. Grind - same setting as for Major Tom Tamp - Light+ Single fellini Pour - 23 secs for 18ml Rating - 9.4/10 Wow! ... just Wow! .. and it isn't fully rested. KK's Yirg was brilliant .. so jumping at this bean again was a no-brainer .. and has delivered once again. :thumb: Nice work Jonty
Tomorrow - It's right back onto Brett's MM and Rwanda .. to get the grind setting right .. for starters.
let me know what you think of the Tiger I was disappointed with it, yet others loved it. I have some Honduras COE at the moment going to try it tomorrow
