I've been roasting a couple of years, 725 grams of green a week for 52 weeks  comes to around 38Kg, and that's about the stock I like to keep in reserve, 12 months supply.

40kg aint too bad. SWMBO hasn't noticed that the bags are 2 rows deep (yet) so I reckon I Could squeeze another row in taking me up to 30kgs. Thing starting to worry me is the 3x3x3 rule I often see around.... need to get more family and friends into this!

Right, so here is my EOFY stocktake list. A bit less than I thought. Peru Ceja De Selva - 3.0kg Costa Rica San Isidro - 1.3kg Brazil Pulped Naturals - 2.5kg PNG Kone Ka - 1.9kg Malawi Nyika - 1.9kg Bolivian - 3kg Ethiopian Harrar Star DS - 2.3kg PNG Waghi AA - 1.8kg Laos Dong Hua Sao - 0.8kg Ethiopia Guna Limmu - 2.1kg Indian Monsoon Malabar - 1.1kg Costa Rica San Marcos - 2.5kg Nicaragua La Gloria - 2.1kg Java Ijen Sundried - 0.5kg Rwanda Gisenyi - 1.2kg Sulawesi - 1.9kg So that brings it to a total of 29.9kg And 2kg of Indian Kaapi Royale Robusta and 0.9kg of Brazil Fazenda Ipanema "Dulce" 2011 on the way, which will bring it to 32.8kg by the end of the week (I've got enough roasted to last me the week). Brazil Daterra Monte Cristo Natural Ministry Grounds 0.521kg Enjoyable blending base, well priced, as described. El Salvador Finca La Fany Ministry Grounds 0.410kg Sugar cane & other gentle notes linger in the cup - roast quite light for biggest rewards. Turnover and not holding endless amounts of greens can be a good thing given that while they may last a while, greens are still susceptible to aging and storage issues.  Most of the guys with big stashes will be those suppling friend and family.  Plus, next order buy 10kg of JBM and you'll have bragging rights over most!

To use a random quote, I feel like my rather paltry 20kg is "heaps", but wifey and I get through 1.5kg/week, which other people have called "a cubic buttload". We also keep a wholesale account with a big roastery in Castle Hill for our church playgroup I think holding greens from last year's crop on purpose is not a great idea unless you're doing it for a very specific reason. 6 months and you certainly lose a couple of points in Cup Quality (CQ).

I'm not sure I agree completely with the 6 month guideline and losing CQ points. It comes down to individual bean character, how it is stored, etc. Whilst many can't access moisture meters to track and manage green bean condition, I will state that some greens can actually improve over a 6 month period. Why this is the case I'm not sure and it's quite difficult to trace backward to investigate whether is was due to early, mid or late harvest, processing schedule (accelerated or delayed) or in fact any other factors we don't entirely know of that may cause this situation - such as storage in ports and transport conditions. What I do know is that some beans, particularly when they are very fresh (wet-hulled Sumatrans in particular and even some Brazils we recently received literally within 2 months from processing) are particularly unstable in the first 3-4 months upon arriving (this being up to 5 odd months from crop). It's the reason some quality estates can actually store their processed beans in wooden vats for 3-4 months prior to shipment to ensure stability. Ipanema and Monte Alegre are examples of leading farms using this practice. I found a couple of bags from 12 months ago stashed under other bags. After roasting these for a customer, my control samples were some of the best coffee I've tasted in a while and far superior to what we were pulling from the current crop (same origin, varietal, farm/co-op) in a back-to-back test. What this tells me is age can be less of a factor compared to original bean quality and roast performance.
