After the old forum software breaking in a way that we were unable to fix, we've migrated the site to a new platform.
Some elements aren't working as we'd hoped - some avatars didn't survive the transition, and we're still having issues with attachments that weren't added as inline images, but we're hoping to have that all sorted out soon.
I think you'll find many roasters are quick to be guarded about their craft. A couple of good starting points though is contact the australian specialty coffee association (aasca), as they run roasting classes from time to time. I think toby's estate (NSW) also run a class on it. With some knowledge behind you i think you'll be in a much better situation to approach roasters regarding an apprenticeship. Best of luck
Definately contact AASCA as your first step. There are also a few good roasting courses in the states. If you are purchasing a roaster, many of the manufacturers offer free courses with the sale.
hey Jason - when are you open over the break? I swung by late yesterday afternoon (I can not tell a lie I took my 20 month old to the ginger factory and she loved the train!) but you were closed it's a good thing that I roasted up some kimel before I left home to keep me going while we're away - but now the cupboard is bare! cheers, pat
