After the old forum software breaking in a way that we were unable to fix, we've migrated the site to a new platform.

Some elements aren't working as we'd hoped - some avatars didn't survive the transition, and we're still having issues with attachments that weren't added as inline images, but we're hoping to have that all sorted out soon.

What to blend with Java Kalistat

I have 400g of the sublime Java Kalistat left (should've bought 10kgs of that alone) and want to blend it with another bean to make up a 600g batch.

I'd like to both compliment and enhance its cocoa flavour without adding too much additional brightness.

I've got some Harrar left, along with some Sumatran Kuda Mas, both of which I thought might be appropriate to keep the notes, notes, notes less lively.

Then again, I've also still got a bit Ethiopian Yirg and some MM left, along with a random smattering of other beans,

What say you, cremas?

    To create that chocolate flavour you arte salivating for ? You have in your stockpile the basis of a classic Mocha Java Sumatran beans with  North African beans @50/50 So in your case its - Harrar with  Sumatran Kuda Mas KK

  • You can interchange the beans and play around with the ratios as long as its Sumatran beans with  North African beans I sometimes roast the Sumatran a little lighter and when mixed they stand out KK
  • Like most Sumatrans, they exhibit low-acid, thick body and a creamy, buttery texture - they are not birght by nature, so they blend well with bright coffees from Africa or Central America. Go with a nice lively Costa Rican in say 30% ratio to give the cup some high notes, whilst the Java will round out the base and bottom of the cup.

  • guys, I think I may have mentioned a few weeks back - Sumatrans are scarce at the moment and you will be paying significant premiums to replace your stock levels for the next 3+ months. Despite the C dropping over the last few weeks, Sumatrans are trading very high and will do until supply can meet demand - which usually means next crop. My tip - go easy on them for a couple of months

  • I tried KK's Kuda Mas/Harrar blend shortly after this last post. It was one of those roasts I kinda let get away from me - Had a lot of work on, my choir was in full-blown rehearsal mode and we had guests at the time I ran out of coffee... so I simply threw 600g of the above blend into the KKTO and pretty much left it to it. 18mins later I realised it was still going and pulled it out right at the first snaps of second crack. No visible tipping, very even roast and I wish I'd done more - it's absolutely delicious. Will be trying the suggestion from MyCuppa tomorrow.
