As a cafe owner and barista I always strived to perfect the making of espresso and instill that passion in my staff. I researched, met the big names in the industry, spoke to roasters, machine techs, scoured the internet, read what I could and played incessantly behind the machine.

Issue: Single and double group handles extract differently Answer: I use two grinders set to each size group handle,single usually requires coarser grind, and no they aren't adjusted every minute as a certain American expert suggests; this is a ludicrous notion, I then dry the inside of the group handle prior to dosing and then tamp well with a hand tamper onto a set of bathroom scales to ensure consistency. Yes The it's a bit like the modern day HOLY GRAIL. The story line is also like the Monty Python film of the same name.... I know it's out there somewhere....but I keep looking :o :o :o :o :o :o :o :o :o :o :o :o :o :o :o :o :o :o and looking and looking After you know how good it can be, how do you go when others make you Espresso?

Tasting other espresso is always a positive experience although I always get the feeling that the training the barista received was lacking something or that the owner is not interested in providing the best possible product. Being in business and not having a 'do your absolute best' is a recipe for disaster in todays commercial world. Afterall it is quite easy to make good/great espresso and I am constantly amazed how few people actually try and achieve it. Yours in golden, reddish brown or whatever colour great crema can come in Leather crema

My advice to all you people is to experiment with your own ideas if you think they are right and it works for you stick to them and inprove them dont copy other people, in the coffee world i found that many things work for some but not for others,i do things my way and have allways worked on inprovement. good luck :P

My coffee company that suplies me coffee beans told me that a blend must have robusta in it to really make it taste good is this true?

What difference in flavour it makes i dont know but as you can get different quality robusta and i heard that there are some really good ones out there! maybe it makes a difference ,but from personal experience all i ever taste from a blend that has robusta in it at least 20% is cigarette ash or the smell of burned rubber stick to the 100% arabica or something that has at least 10% robusta but of a very high quality .good luck ;D
