Hi - as my Birthday present I bought myself a Hario kettle and a Clever Coffee Dripper - my wife who suffers through my relentless quest for the perfect cup of coffee was really impressed with my first effort - so things are not too bad in the Springbok Household..

Go the Reds!!!

Happy birthday. I looked at this method for work but the you can't share this method as easily as a plunger so my philanthropic ways have won over for now. What filters are you using?
  • Where is the best place to get hold of these? I know 5senses sell them anywhere else? Brett

I know this is a hackneyed response but you could always google 'Clever Coffee Dripper' That's what I did and I ended up buying from 5 Senses as I think they are the only Aus seller (or they were 12 months ago when I bought it.

Have done that was just seeing if anyone had a better option. Brett
  • Got mine at Valencia ? in Westend, Brisbane, - really pleased I bought it although Im not sure how one is supposed to clean it properly as there seems to be a compartment that remains wet after rinsing with no way of getting into it to dry it..? Just used Melitta, Aroma filters - Im afraid my taste buds have never been able to identify the offish taste that they are supposed to produce - so Im happy with that - plus I hate cleaning plungers out - so for me paper filters are great! Im now looking for a bigger Pour Over. There was a Kone metal filter there as well but Ive heard that the mesh isnt that fine and lets a lot of sediment through ??
  • Some fines but not a lot, there is a new metal filter on the market that is finer but I can't think of it's name right now. Brett

I bought a stainless mesh filter from WotB. Here's the the link to his website http://wineofthebean.com.au/epages/Wine_of_the_Bean.sf/en_AU/?ObjectPath=/Shops/Wine_of_the_Bean/Products/CC-v60 . The demo we did at his place went well as we were grinding with a Mazzer Mini. THe CCD brew and pourover worked very well with a nice clean cup and a few fines in the bottom of the cup. Unfortunately I only have a Breville BCG400 which does not grind well enough for this style of brewing - produces a bit of dust. The mesh filter still lets you enjoy more flavours than the paper filter but my cup was a bit muddy. For the time being I've returned to paper filters until I buy a better grinder. I clean my CCD by rinsing it well and holding the valve open to let water run through it. I dry it with a paper towel but don't worry about the recess as I insert the paper filter, fill the CCD with hot water and let it soak for about a minute or so. This removes any paper taste. I investigated the Coava Kone but I don't think it fits the CCD. WotB's filter does fit fairly well and can hold about 300 ml (I think) a bit less then what the paper filter can hold.

Yep, I only use it at work and have the Mazzer Mini for home grinder duties. It was a Catch of the Day special at a good price.
  • I love my CCD and use them at work and home all the time - and I'm not phased by the paper taint, as I like the profile produced - for me I use 18 gm of coffee and 220ml of water which I infuse for 3.5 minutes including Pre-infusion
  • love love my CCD, have been using it for over a year now I'd say. No problems with paper taint for me, the oxygen bleached papers I get from Coffee Alchemy (also available at Market Lane) don't have any noticeable taint at all. Brew parameters are 20-25g (depending on the coffee & its freshness) in 300ml of 95C water, 3 min steep time no more than 45 sec draw down. I don't bother with a bloom time or anything of the like, given the CCD is a full immersion brew method with a long steep time I abandoned it pretty early on. I didn't notice any negative impact in the cup so never went back to using one.

So do you stir the grinds after adding the water or do you just add water and leave for 3 minutes?

I tried that for a while, but I compared it to brews where I hadn't stirred I felt those unstirred brews were more delicious. I should say my pouring of the water isn't completely random, I do make some effort to ensure all grounds are wet evenly and I pour it in such a manner that this is maintained as I reach the volume of water I intend to use. Simplicity of method is one of the things I love about the CCD.
