Columbia Excelso - Roaster's Choice - single origin Roast date - 3rd August (10 days) Tweaks - grind slightly finer. Dose down from 17.3g to 17g. Dose - 17g Tamp - Light+ Single fellini Pour 30 secs for 20ml Rating - 8.9/10 (B+) Slight improvement .. not much crema. Nice coffee.

I have noticed with previous single origins .. that some appear as if they go through what I would call a 'turning phase' lasting around 3 days ... and coming out the other side, blossoming - producing excellent results in the cup. This Columbian may be going through a transition atm .. 10 days post roast? I guess we'll see if these little babies can shed their skins .. spread their wings .. and take flight ??? Better not take too long ... as .. err .. I'm gonna run out of these beans. It is not unusual for beans to hit their peak .. and I'm down to my last 5 cups .. but hey .. I savor those moments .. trust me. 8) Besides, when these little d00ds have fulfilled their destiny .. I can start on the Ethiopian Yirgacheffe. :thumb:
Whhhhooooooaaahh .. arrival of a potential monster.. even though these beans are the smallest I've ever seen Blimey .. do these little fellas .. from Ethiopia punch well above their weight.. oh yeah baby - they do .. trust me ::) Ethiopian Yirgacheffe (Day 11) - by mycuppa Roasted - 3rd Aug. Pulled grind back to same setting as the Major Tom blend. Dose - 17g Tamp - Light .. almost polish only. Pour - 30 secs for 15ml2nd extraction - 5 secs to top up to 20ml Rating - 9.25/10

I tried a couple of Yirgacheffes 2 & 3 days ago (day 8 & 9 post roast) There was a massive burst of flavor from first taste .. which was very impressive - yet appeared superficial without layers of flavor giving it 'body' and 'depth' A couple of days later, and these little beauties are just gearing up.. :thumb: Cheers mycuppa/J - this Yirg is a cracker .. err .. but I guess you already knew that. ^-^ ps. Glad to hear Moony 'ol chap. That Yirgy is very special. We have 6 different Yirgys at the moment because supply of various Yirgacheffe in Australia has been extremely challenging since Jan this year. I have never seen such a long spell of shorts on Yirgy. So we have a range of washed and unwashed grade 1's that have a big spectrum in cup character. Some, like this lot, do not cup like classic Yirgys (and it is the reason i liked them) That specific lot is quite difficult to dial in but will reward you when you persist. I have also been drinking that batch myself in the morning at home this week. I found it challenging when using a few flat burr grinders but my Kony-E seems to make easy work of it. The cup will have rum and raisin at front with a very long Swiss chocolate finish. There is some really juicy syrup running through the middle that resembles a cherry ripe. It is the sort of coffee you could enjoy as a desert.

Not surprising of the 9+ rating on the Yirg. [emoji106] It,s a great bean for espresso and manual brews. Great also as a short mac but not for bigger milk based drinks. Are you getting some bluberries and elderberries Moony? I had Ethiopian Sidamo recently that had stone fruit like peaches. Beautiful.

Nah I'm flat out trying to get a good cup of coffee out of this Yirgacheffe. mycuppa said the Yirg was difficult to dial-in .. which is what I am finding. I'll stop to smell the roses (blueberries, elderberries) after first achieving a decent cup of coffee I reckon. I've never eaten elderberries .. and perhaps blueberries only once many Moons ago, if at all, so I can't say I've detected any berry flavours so far. The only fruity flavour I've picked up .. was passionfruit in a batch of Georges Premium blend beans.
This Yirg presented well .. only I am still experimenting with the dose, and grind. Tamp is polish only. The pour has been too slow .. yet when I adjust slightly coarser .. it loses 'body' & 'flavour' I grind finer .. and the pour is even slower. Decided to try dropping the dose back from 16.5g to 16g .. and now 15g - to see if this allows better water flow? It brought the shot back to 30 secs for 15ml - only it's drippy from 3 points rather than a single central continuous pour. Don't mind 'gloopy' .. although it does still appear a little tight. Problem with the 15g dose .. even if the pour was slowish (which should extract more flavour) it came up weak. Perhaps mycuppa could shed some light on how he has dealt with the dialling-in the Yirgacheffe .. seeing he is currently using these beans himself. * Dose .. same, updose, down dose * Any Tamp change? * Did you have to grind finer or coarser than you expected to find the sweet spot?
Every individual setup works differently in terms of finding an optimal extraction efficiency. I use 21g laser cut baskets, dosing between 20g and 25g - depending upon the coffee, the bean age and style of coffee I want at that moment (I dose differently for espresso compared to ristretto), from a large commercial conical grinder and extracted on a rotary pump driven espresso machine. The dynamics of what works for me in adjusting my shot may not help or even be valid for a different type of machine such as a lever, different basket sizes, flow rates, brew temperature and quality of the grind (defined as those who may run an empty bean hopper and weight their shot dose beforehand, allowing for low or almost zero downward pressure being applied to the beans on the burrs during the grinding stage). The bean is very hard and it's a medium roast to preserve fruit characteristics. Typically (but not true in all cases) when you down-dose a hard bean and the ratios are not right, you increase the risk, extent and impact of channeling. The key is inspecting pucks and combining with the cup taste - that is the only way to learn and adjust techniques that can lead to improvements on your own kit. Personally, I don't run empty hoppers as the majority of grinders with their horizontal orbits do not work effectively - empty hoppers are intended for a different style of grinder. For me, dose weighing is only performed randomly by measuring the zero tare of a portafilter before locking in for a shot. My adjustments are made based on eyesight (the pour), resultant color and taste.

I personalty find getting fruit flavors the hardest thing to achieve, I am always trying to squeeze the fruit out of the bean, temp has a lot to do with it I have found. and of coarse the bean and the way it is roasted too.

I've had a bit of a look around .. and haven't seen anything other than what comes with the machine .. a single and a double basket. Think it is 14g? .. which is fine - as it suits a std cup size of 6oz. If I was still doing mugs .. I'd want to ramp it up to possibly an 18g .. only seeing it is an odd sized basket - 45mm .. there aren't the options.

Previous pours have all bean 30 - 50 secs, yet the last cup had the grind a fraction finer .. and poured quickly in about 20 secs .. and tended to gush a little. The faster pour ended up being the nicer coffee. I haven't managed to get decent crema on any of the coffees so far.
I usually do get pretty good crema .. and sometimes massive. I am getting some crema with the Yirg. mycuppa did say the Yirg is difficult to dial in .. so I guess I shouldn't expect to have a win every time. 14g suits me .. as it is still a double shot in a std cup .. which is ample for my taste. Larger than 14g would be too much caffeine per cup. I'll be getting some new beans .. so I'll see how they go.

Columbia Excelso Dose - 16.1g Tamp - Light Double fellini + 1 half way up. Pour - 40 secs for 22ml Rating - 9/10 Would suit those who like their coffee stronger. Plenty of punch but lacked any exotic flavours .. well, according to my taste buds anyway... The last cup was a 20 sec pour, and was lovely .. so it would appear that, for my particular machine - the faster pour is the way to go .. although this is only based on 2 coffees :lamp: lol. I'm now down to my last 2 doses of beans. Gotta go hunting for my next batch. Exciting times :coffee2:

Had to have one while I was there .. and wondered what the price would be? Shock horror - it had gone up!!! $2.20 now <--- Yep, you heard it right folks. That's a 20c rise in the last 8 years. It always has an unusual taste when they make it. Will be interesting to see how it goes on my setup.

Hey Moony.... MyCuppa Ethiopian Limu one week and one day post. 2 sinkers to dial in then 9.3/10 and 9.4/10 YUMMY! 91degC. I'm going to try 93 tomorrow. 11/10 here we come!

I can't really describe the taste - only it has bean the same since I began going there, around 20 years ago, and it was always $2. I did ask about the price about 8-9 years ago .. and the owner, and old traditional Italian bloke, Sam - said that he owned the building and was doing ok.. and therefore no need to increase the price. It is a family business .. and the same people were working there today. It appears Sam is happy to provide locals with a decent coffee .. and sell beans .. which is all they do. There are other Cafes and food shops selling kebabs etc. I wish they had a Coffee/food mall like this in Werribee. Their house coffee is the Costa Rica, which has a unique flavour .. and not to everyones liking .. however, they have many regulars and provides an outdoor meeting place which has served Coburg's multicultural community extremely well for a very long time. I remember buying some Costa Rica beans back in the day to try out using my coffee machine at the time .. Delonghi or $200 Sunbeam?? .. and remember there was no sign of the flavour they produce using their equipment. * They have their range of roasted Coffee Mio beans on display in the window - in open hessian bags. Not big on storing in a cool dry place in a vacuum sealed container >:D Probably doesn't matter what they do .. it always tastes the same. 10/10 for price, service .. and consistency. :thumb:

I'm still trying to figure a way to get Jonty to serve me up with some more of his Ethiopian Yirg or Indian Tiger Mountain which blew me away .. both scoring 9.5/10 I think (Yirg did) Oily buggers .. only they were flappin amazing. They spoilt me .. and anything else doesn't seem to get close. :tear hair: I'm scratching to get out a 9.2/10 these days.

The last 2 lattes have been made with a 30ml shot .. instead of the usual 20ml .. which I prefer. Will have to include a few Piccolo lattes into the mix.
