After the old forum software breaking in a way that we were unable to fix, we've migrated the site to a new platform.

Some elements aren't working as we'd hoped - some avatars didn't survive the transition, and we're still having issues with attachments that weren't added as inline images, but we're hoping to have that all sorted out soon.

Interesting article about coffee freshness, confirms most of what we know with a few points to ponder, in the end , as he says, it's all pretty subjective.

The one point most of us agree on is, don't freeze yer beans. :)

  • Great find DB.  It's nice to read something in regards to the topic that is balanced and seemingly substantiated. 
  • Professor Chahan Yeretzian, a PhD in the field of chemistry who has dedicated much of his professional career to studying the emerging science of coffee freshness. The Professor says Coffee ages slower if you cool it down Moon - Does this mean meat, dairy, veggies etc ... will also stay fresher if we cool it down - like keep it in a fridge? The Professor says Freezing MIGHT change its (a beans) structure .. and cause individual beans to crack. Moon - Professor of Chemistry eh? Have you run any tests in the Lab to confirm this ... or is this an educated guess? C'mon Professor ... if you have dedicated your life to studying coffee ... give us some facts ... can, maybe, in my opinion - doesn't really cut the mustard Rather than using your 'expertise' to bang on about freshness and aroma ... how about giving us the facts on freshness and FLAVOUR? What's more important - aroma or flavour? The bottom line - If you're going to dedicate your life to the Science of Coffee ... you gotta give us more than that  >:D

  • Mooney - I have a sense you might be a tad ruthless there old chap. The kind Professor has actually said quite a bit in this article. Obviously, I am reading it with a bit more "knowledge and inside experience" to the average consumer, but let me stand in support of the kind Dr........he has actually said a lot......you just need to read between the lines. This article reveals many truths - far more than I've seen in such a short article .........anywhere (with the exception of reading Dr Illy's research tome). The research and development undertaken by the good Dr would probably blow our minds knowing the funds and resources those big global groups throw at their R&D.......but of course, we must always remain mindful and respectful of the possible fact that a good portion, if not all (and that includes work undertaken at academic institutions) would have been sponsored by a commercial company - so the devil in the detail will be "owned" by the party who paid for it and for competitive purposes, they would not appreciate someone shooting off at the mouth. I for one am really grateful for Dr Coffee's position on freezing fresh roasted coffee beans.........at times I have felt a lone wolf out on that wilderness for many years trying to hold my view of not freezing.......much to the mocking of many unofficial coffee experts. You see Mooney 'ol chap, knowing the fanatical views of most Italian and European roasters (where do I begin to explain how many resources they invest in extending shelf life - it would make your head spin), the Doctor will have run a so many tests whilst in lab environments and working in R&D in order to qualify and discount what works and what does not and how the life cycle of freshness plays out. Those valuable insights are precisely that........valuable..........extremely valuable. My view is that the Dr was in fact playing good coffee politician........yes I know more, but I'm not going to share it publicly.

    Yeah .. well ... I was a bit harsh on the good Professor .. who obviously makes a valuable contribution to the Coffee Industry that benefits us consumers.

  • Here's a better idea... Let's both not buy the book, make up some fiscally beneficial faux-science based rules with original nomenclature, then bang on about it here until its folk-law.  We'll recolour the forum, commercialise it then work the members for dollars as they unerringly spend to attain the Brown Grail never knowing that the next unattainable is for ever over the next geographical landmark.... with hope the bloody thing doesn't erupt ruining everything for everyone.  Just keep this plan between us Mooney and I'll go you 50/50. ;)

  • Nice one! I never freeze my beans... Another tip I know is you should clean your brewer and never mix your coffee beans. That way it will stay fresh too. The fresher your coffee is the more successful you are in life.

  • There are plenty of punters out there paying $1,500 to go see/hear Oprah Winfrey. Don't know about you folk ... but I'd much rather be drinking and enjoying an excellent cup of Coffee.  :coffee2:

  • I've read that if you freeze your portafilter along with your beans then grind both with a meat mincer and then brew the grinds with some butter you will loose weight and raise your IQ. No? Great article DB. I don't freeze but before I got into real coffee a friend of mine got me keeping my preground coffe in a sealed container in the fridge. Those were the days :)
  • Lol.... I went through the frozen ground coffee phase as a student.  I wonder what would happen if we could take our pallets back in time?  Wouldn't it taste like nostalgia or blurk?
