After the old forum software breaking in a way that we were unable to fix, we've migrated the site to a new platform.

Some elements aren't working as we'd hoped - some avatars didn't survive the transition, and we're still having issues with attachments that weren't added as inline images, but we're hoping to have that all sorted out soon.

steaming ahead with ceramic

Hi All - I've been getting some marvelous results at home recently texturing milk with a beautiful old Japanese ceramic milk jug that I bought for $1 from an op shop!

Seems to provide very good temperature stability and works well with only a small amount of milk  (say enough for one cup) as well

Has anyone else tried ceramic and what do they think?

PS - don't try collapsing bubbles by banging a ceramic milk jug on the bench top - personal experience has taught me that this is not good for the longevity of the jug!!!!

  • When short a jug i've been known to grab just about anything at hand to get the job done.  From memory i've steamed in a 12oz t/a cup, a ceremic milk jug (for pouring milk at the table), metal bowls (used for mixing etc), a coffee plunger, a glass pyrex jug (that was cool to watch), a Mug and even the milk carton. Most of these were stupid ideas or whatever was at arms reach, but I do agree with you about the thermal stability of the ceramic.  And for training purposed glass works well.  But I doubt any of these would be adopted for commercial use due to the potential risks of breakages. I'd love to try steaming in the large sized bodum pavoni's.
  • I always do milk for Hot Chocolate in the clear pyrex type measuring jugs, or if its one straight into the mug size cups, always seemed to get better results.
