After the old forum software breaking in a way that we were unable to fix, we've migrated the site to a new platform.

Some elements aren't working as we'd hoped - some avatars didn't survive the transition, and we're still having issues with attachments that weren't added as inline images, but we're hoping to have that all sorted out soon.

  • Sirius Classic - blend Dose - 17g Tamp - Light++ Double fellini + 1 Pour - 30 secs for 25ml Rating - 8.7/10 Poured a little faster this time .. so it didn't have the flavour of previous lattes using these beans., resulting in a nice coffee .. only a little off the pace. Maybe it needed the 2nd fellini - which would have slowed down the pour a tad. Allowing for the pour time lost during the fellini moves .. I reckon 40 secs is about where it's at.
  • My survival depends on it. Grind setting is right, although it will probably need adjusting as the weather gets warmer and the beans dry out .. age Dose? May need to up it from 17g to 17.1 or 2? May need to do the 2nd fellini .. once the pour becomes continuous? One thing is sure .. it's not the beans .. my method needs tweaking. If I want to drink the golden brews  .. I've gotta be on my game.  :angel: Exciting times ahead .. as always  :thumb:
  • Sometimes a change is as good as a holiday.  Why not make plunger or Syphon brews tomorrow and come at it fresh on Sunday!? It's like the coffee equivalent of "turning it off and turning it on!"
  • Good call Brett I've got a plunger around somewhere .. and it will give me an opportunity to wind up the Spong No4 hand grinder. Haven't used a plunger for years. Had a coffee from one last Sunday .. Vittoria beans <---- Mine will be better  >:D Excellent idea.  :thumb:

  • Hasn't happened yet. Although C-man calls it a 'change-up' .. I'm not convinced.  :P Having said that .. I'm prepared to take a hit for the team. This mornings latte seemed better .. only still being dopey before my first coffee .. I can't be sure. I'll be digging around in boxes under the house shortly .. to find that plunger .. I have 2 of them .. and unless they are together .. it doubles my chances of finding one. Think I'll go make another latte using my PV Lusso .. puff on a gasper - and gear myself up for the search. Later.
  • I try the plunger one in a while, it is a change but does not really compare to what you are used too to speak your language, a good plunger may hit about 6.7 on your scale if you are lucky then again maybe I use too much water?  should I just use about 30-60mm? drifting a bit off-topic here....but why not?

  • Well .. no luck finding a plunger under the house .. which is raised 5ft (1.5m) on poles, so no difficulty there. Must be inside in a box that I haven't unpacked since moving in 7 yrs ago. It happens.  :angel: Going the plunger - even if it produces Brett's 9/10 on a good day, it is still a downgrade - meaning I'm in no hurry to go there. Back to the PV Lusso Sirius Classic - blend Dose - 17.5g Tamp - Light++ 2x fellini + 1 Pour - 35 secs for 24ml Rating - 9.2/10 Has to be better than a plunger coffee .. yeah? Nice .. Slowish start to the pour .. and with the grinds being well saturated, I went with only the single fellini to speed up the pour a little. Good result .. and certainly no complaints with a 9.2/10 score. I can live (happily) with that  :coffee2:

Should make enquiries as to whether there is an 18g basket for the PV Lusso .. incase I would like a brew with a little extra punch. Suppose I could do a Piccolo latte in a 4oz cup .. the only downside of that being .. they don't last as long. A couple of gulps and it all over red rover. :'( Only bean having 2 coffees a day recently instead of 3 .. and seeing my first doesn't get a rating .. that only leaves 1 to post up in here .. which means I have to make that one count. Reason being .. that I rarely eat anything until early afternoon these days .. and once getting to the hungry stage .. don't like filling up with coffee. Although coffee/caffeine doesn't keep me awake at night .. i haven't bean drinking coffee in the evening either .. probably because I've bean doing Indian cooking courses .. and coffee doesn't mix with curries that I've bean cooking up regularly.

    Brettman- could you give me the quick run down on using the plunger?    how much water? ect ect.
  • I go on a 10g/100ml ratio with water that has boiled then sat off the boil for 3 minutes.  I then pour into the plunger (down the inside of the vessel while rotating to temper the chamber). Stir, infuse for 1 minute, stir again and plunge.  Enjoy!

Would be interesting to try this blend using .. say an e61 group head, rather than a lever.

  • Sirius Classic Dose - 17.6g Tamp - medium 2 x fellini +2 Pour - 45secs for 26ml Rating - 9.23/10 Appears the 'medium' tamp works better than 'Light++' for these particular beans.
    Fellini fine tuning 1. Hold lever down for 10 secs to pre-infuse grinds .. if drops don't appear, slowly release until they do. 2. Push lever down fully, release .. then repeat 3. Wait 10 secs for drops to turn into a continuous pour, then allow it to run for another 5 secs This boosts the shot volume up from 20ml to 25ml .. and gives you some of that initial quality undiluted extraction. 4. Pull lever down, release .. then repeat Total pour time after completion of step 2 .. 45 secs 45 secs seems about right .. considering it starts slowly .. as well as pour-time lost during the 2 double fellinis.

    Dropped off the pace since then .. although not too far off. Well .. decided to forego the measuring of the dose - and now trying out the timer on my Compak K3 Touch Advanced grinder .. seeing I haven't used it. I now have a jar full of ground beans to use up .. while I figure out the right timer setting for a single dose .. which I then need to double up for the double shot. I can't simply tap it twice as the first dose needs to be tamped down .. or else it overflows the small PF basket. Bit messy. The downside of such a small basket. Recent coffees have bean 35 secs for a 25ml shot .. except for the last one .. which was 35 secs for 30ml. I really don't like the flavour that comes from the 30ml shot .. although the 35 sec pour is better than previous 45 sec pours which has tended to be a tad bitter. Allowing for the fellinis .. pour-time is about 30 secs for the 25ml. The difference in rating for a coffee (latte) using a 25ml shot is about a 9.1 - 9.2/10 .. whereas, it drops down to around a 7.5/10 with a 30ml shot .. meaning that the last 5ml in the extraction is quite yucky .. bordering on a sinker.

  • Blimey Seeing I have to use up the pre-ground beans due to still getting used to the timer setting on my grinder .. after adding a little of some freshly ground to top up .. it turned out the nicest coffee I've had so far from these Sirius Classic beans. Go figure? Pssst .. don't tell anyone else on this forum will ya  :angel: Freshly ground beans are supposed to start losing it after about 10 minutes.

    George Clooney? I'm a little surprised George, after remaining single and independent for so long, ended up trading it in on some style, elegance and femininity, rather than choosing himself a soulmate. Along with his partner in crime .. Mel Gibson, who also found himself being lured in by style over substance .. it will be interesting to see if George ends up getting an Oscar nomination for his role as a fashion accessory to his new bride, Amal .. and how he copes with playing the part of the Human handbag.  ??? I guess we'll all have to wait until after the honeymoon period has elapsed .. and George experiences one of those 'What have I done?' moments .. much like when you stagger out into the kitchen in the morning to make your first cup of coffee .. take that first sip, and then realise that somehow you've ended up with a cup of nescafe .. wtf? .. and begin to splutter and choke on it. The writing was on the wall for George .. when he did a deal with the Devil .. and chose to take the money and do those Nespresso ads. The script was never going to end well for Mr Clooney .. after that, unfortunately :doh: There are just some places a Man shouldn't go.. If only George had played the role of Ulysses .. he would have known to have a mate tie him up to a pole - to prevent being allured by the beautiful siren. Hmm?   • Ok .. I'm sure George is having a great time .. so let's get back to what's important here.. Well .. it has bean interesting using the timer on the Compak grinder. I've set it to give me 2 x 8g shots. The first goes directly into the PF .. where i do a polish only tamp to level it off, and then the remaining shot into a small plastic container .. which I then use a teaspoon to top up .. and tip the last of the grinds in .. being careful to avoid spilling any. Being only a small 45ml basket - it will overflow if I allow the second 8g to pour from the grinder chute straight into the PF. I then do a light++ tamp .. and it's ready to hook up for the pour. The 1st pour was 30 secs for 30ml .. using 15.1g of grinds and the 2nd coffee was 25 secs for 25ml using approx 16g These coffees are turning out better than those previously made when weighing the beans first. The hopper is currently filled up with the last of the Sirius Classic beans .. so this method doses by time rather than weight as I have been doing up until this stage -  and it seems to be working out better. Maybe it has something to do with the polishing tamp halfway when only a single shot dose is in the PF? The lattes are definitely coming out darker and richer. Even the first cup with the 30ml shot tasted pretty good, although the 2nd with only 25ml .. was better .. and I would rate it at a 9.23/10 which is a very nice coffee. The 25-30 sec pour time seems to be working better .. as I found that when the pour was 40-45 secs .. it was a tad bitter, which tells me that the extraction was too long. A shorter pour is more sweet .. and without the bitterness.. so now I'm back to the 25 -30 sec ideal pour time (allowing for the 2x2 quickish fellinis)

  • Yep .. liking the timing method. Sirius Classic - blend Pour - 28 secs for 28ml Rating - 9.25/10 Just ordered my next lot of beans from mycuppa Going back to try a kilo of 'Barista' blend. Reckon my method is heaps better now .. than the last time I tried these beans. Being a kilo .. there's plenty of time to dial these babies in .. and enjoy the spoils. Yeah Baby!  :thumb:
